Pasteurization of milk

Milk is tha first natural food of all off-springs and, therefore, has an important part in the diet throughout life. The cow is the most important of all these animals as supplier of food. Buffalo and goat milk also used.

Milk is important part of our diet because it contain all type of nutrients. Milk is like complete food.
But now-a-days milk became a toxic for human. Now we will talk about how milk bacame toxic for human.
There is a process that make milk toxic.

                    Pasteurization
Pasteurization is a process by which milk heating at the specific temperature for a specificed period of time without allowing recontamination of that milk the heat treatment process.

            Effect of pasteurization
Nutritive value:-By pasteurization process milk nutritive  value decrease by the heat, sensitive nutrients like thiamine and ascorbic acid.

Flavour:- flavoring compounds are destroyed in the  process of pasteurization.

Microorganisms :- approximately 99% of bacteria, yeast and moulds are destroyed by pasteurization.

Enzymes :- A part from phosphatase, lipase also gets inactived which would have affected adversely the quality.
